Both my man and myself like food and traditions and Christmas is full of both of them. We're really enjoying the preparations. We have the freezer filling up with traditional meat balls and sausages and also this speciality "lunch meat" made of a pigs head :) It's been boiled and taken apart and then layered with spices of all kinds and then put under pressure for a day to make this delicious looking thing :) It's eaten with some mustard on either bread or what we call "lefse", thin "pancakes", but cold, and made out of potatoes. We also use smaller versions of lefse, called lompe, to have regular hotdogs in, instead of a hot dog bun :) Very particularly Norwegian. This is traditionally only served for Christmas, and it's a "must" on the Christmas day buffet! (Most people however, buy them... not may people make their own from pigs heads anymore....)
